Taste: Slightly fizzy and fragrant, this radiant sparkler boasts heady scents of honeysuckle, lemon blossom, and white stone fruit. The crisp, dry palate delivers green apple, Bartlett pear, citrus zest, and a saline note alongside vibrant acidity and lightly foaming bubbles. Fermented in the bottle, it has some sediment at the bottom that adds flavor and complexity. This can be slightly shaken, depending on your feelings toward this sparkler style. Either way is right!
This Asolo Prosecco DOCG ‘Col Fondo’ (with sediment) was born from the desire to rediscover papà Emilio’s old technique in the production of Prosecco. The grapes which shape this wine are selected from their oldest vineyard. From there, the grapes macerate on their own skins for 18 hours. All this time and age produce a base wine that has a strong personality and minerality. A second fermentation in the bottle follows shortly after, in accordance with the traditional method, but without disgorgement. In this ethos, the belief is that the presence of yeast in the bottom of the bottle is indicative of genuine healthiness.
